Herby Rack of Lamb
Rack of Lamb

Ingredients
- 1 rack lamb frenched
- olive oil
- 1-2 tbsp. dijon mustard Grey Poupon
- 1- tbsp. deli mustard Carnegie Deli
- 1/4 cup parsley
- 1/4 cup mint
- 1/4 cup chives
- 3 cloves garlic
- 2 tbsp. rosemary
- 1 lemon zest and juice
- 1 tbsp. kosher salt
- 1 tbsp pepper
Instructions
- In a small bowl mix the mustards. In the food processor put all of your fresh herbs,garlic, lemon zest and juice. Pulse. Stream in a little olive oil until moist. Preheat oven to 450°F. Cover the lamb bones with tin foil. Sprinkle the lamb with salt and pepper. Place a layer of the mustard on both sides of the lamb. Coat both sides with the herb mixture. Roast for 22 minutes. Serve with matzoh zucchini lasgnna. Bon Appetit.
