Irish Stew

Ingredients

  • 1 tbsp. olive oil
  • 4-5 slices bacon cut into small pieces
  • 2 lbs. stew beef
  • 3-4 carrots cut into chunks
  • 3-4 celery stalks cut into chunks
  • 3-4 onions cut into chunks
  • 3-4 yukon gold potatoes peeled and cut in chunks
  • 1-2 tbsp. tomato paste
  • 1 can beef broth
  • 1 bottle dark beer
  • 2 bay leaves
  • 2 tbsp. Worcestershire Sauce
  • 2 tbsp. parsley
  • kosher salt
  • black pepper
  • 6 cloves garlic minced
  • 1 cup red wine

Instructions

  • In a heavy pot add the olive oil fry up the bacon. Remove with a slotted spoon, and set aside. Sear the beef in the bacon fat on both sides. Remove the beef with a slotted spoon and set aside.Add the onions, carrots and potatoes. Cook for a minute and add the garlic. Add the tomato paste and cook for a minute. Add the beef broth, beer and wine. Add the beef and bacon back to the pot. cook on simmer for 2 hours. Stir every few minutes making sure the liquid doesn't diminish. You can then add more beef stock, beer, wine or water. Serve over mashed potatoes. Bon Appetit.
