In a heavy pot add the olive oil fry up the bacon. Remove with a slotted spoon, and set aside. Sear the beef in the bacon fat on both sides. Remove the beef with a slotted spoon and set aside.Add the onions, carrots and potatoes. Cook for a minute and add the garlic. Add the tomato paste and cook for a minute. Add the beef broth, beer and wine. Add the beef and bacon back to the pot. cook on simmer for 2 hours. Stir every few minutes making sure the liquid doesn't diminish. You can then add more beef stock, beer, wine or water. Serve over mashed potatoes. Bon Appetit.
