Irish Stew

Ingredients
- 1 tbsp. olive oil
- 4-5 slices bacon cut into small pieces
- 2 lbs. stew beef
- 3-4 carrots cut into chunks
- 3-4 celery stalks cut into chunks
- 3-4 onions cut into chunks
- 3-4 yukon gold potatoes peeled and cut in chunks
- 1-2 tbsp. tomato paste
- 1 can beef broth
- 1 bottle dark beer
- 2 bay leaves
- 2 tbsp. Worcestershire Sauce
- 2 tbsp. parsley
- kosher salt
- black pepper
- 6 cloves garlic minced
- 1 cup red wine
Instructions
- In a heavy pot add the olive oil fry up the bacon. Remove with a slotted spoon, and set aside. Sear the beef in the bacon fat on both sides. Remove the beef with a slotted spoon and set aside.Add the onions, carrots and potatoes. Cook for a minute and add the garlic. Add the tomato paste and cook for a minute. Add the beef broth, beer and wine. Add the beef and bacon back to the pot. cook on simmer for 2 hours. Stir every few minutes making sure the liquid doesn't diminish. You can then add more beef stock, beer, wine or water. Serve over mashed potatoes. Bon Appetit.
