The Robin's Potato Pancakes

Ingredients
- 4 russet potatoes peeled and grated
- 1 small onion grated
- 1 egg beaten
- 1 tsp. baking powder
- 1-2 tsp. kosher salt
- 1/4 cup flour
- oil for frying
Instructions
- After grating the potato and onion, wring out the excess water in a paper towel. Add the flour, baking powder, and salt. In a saute pan, heat the oil until hot. Make one latke and taste for seasoning. Fry on each side until golden brown, about 2-3 minutes. This should make 12 potato latkes, based on the size you make. You might need to make more batches. Serve with applesauce or sour cream. Enjoy Bon Appetit.
