After grating the potato and onion, wring out the excess water in a paper towel. Add the flour, baking powder, and salt. In a saute pan, heat the oil until hot. Make one latke and taste for seasoning. Fry on each side until golden brown, about 2-3 minutes. This should make 12 potato latkes, based on the size you make. You might need to make more batches.
