Potato Salad with The Bacon Jams

Ingredients
- 1 to 2 lbs. potatoes chopped
- 1/4 cup oliive oil
- 3 tbsp. bacon jams black pepper
- 1/4 cup diced carrot
- 1/4 cup diced celery
- 1/2 cup diced red onion
- 1 tsp. dijon mustard
- 2 dash Worcestershire Sauce
- 1 tbsp. honey
- 1/2 cup sliced green onion
- 1/4 cup bacon bits
- 1-2 tsp. kosher salt
- 1 tsp. black pepper
Instructions
- Put the diced potatoes in a pot of cold water with salt. Bring to a boil and cook until fork tender, about 15 minutes. In a large bowl combine the other ingredients. Strain the cooked potatoes and add the other ingredients. Check for seasoning. Enjoy with bbq chicken or burgers. Bon Appetit.
