Potato Salad with The Bacon Jams

Ingredients

  • 1 to 2 lbs. potatoes chopped
  • 1/4 cup oliive oil
  • 3 tbsp. bacon jams black pepper
  • 1/4 cup diced carrot
  • 1/4 cup diced celery
  • 1/2 cup diced red onion
  • 1 tsp. dijon mustard
  • 2 dash Worcestershire Sauce
  • 1 tbsp. honey
  • 1/2 cup sliced green onion
  • 1/4 cup bacon bits
  • 1-2 tsp. kosher salt
  • 1 tsp. black pepper

Instructions

  • Put the diced potatoes in a pot of cold water with salt. Bring to a boil and cook until fork tender, about 15 minutes. In a large bowl combine the other ingredients. Strain the cooked potatoes and add the other ingredients. Check for seasoning. Enjoy with bbq chicken or burgers. Bon Appetit.
