Back to cooking and loving it

I cooked three meals yesterday for my daughter, and it was wonderful. I loved the cooking however like I said yesterday, I missed the housekeeping service from the hospital and rehab. Okay onto the food. I made regular matzoh brei for breakfast and my daughter loved it. For lunch since she can’t get enough of it, I made it again. this time I added chocolate chips. It is not the easiest ingredient to add and it melts rather quickly in the cooking process, but she liked it. I think what might be a better option is to spread nutella on after it is cooked. For dinner I made chicken sausage onions and peppers served over angel hair pasta.  So much for Passover this year. I cut the chicken sausages, onions and peppers and put them in a sheet pan. I added salt, pepper fresh minced garlic and spices. I added chicken stock and some sherry wine to make the sauce. I put it in a 400°F oven for an hour.  The chicken sausage was already cooked so it just needed to be heated through. I also made roasted brussel sprouts. Believe it or not my daughter loved the brussel spouts the best. For that matter so did I. Roasting vegetables really are the best way of cooking them in terms of texture and flavor. I finally agree, brown food tastes good. My daughter loves when I roast the vegetables until they turn brown and crispy. Today I will make my daughter breakfast and lunch today and since we have a doctors appointment today it will be leftover Chinese takeout for dinner. Anyway that is all for today.
