Ingredients
- 1 medium eggplant
- kosher salt
- 12 oz. short cut pasta
- 1/3 cup olive oil more for drizzle
- 2 cups cherry tomatoes halted
- 2 tbsp. capers
- 3 cloves minced garlic
- 2-3 tbsp. red wine vinegar
- 8 oz. small mozzarella balls
- 1/4 cup fresh basil leaves

- Cube the eggplant and place in a colander with salt for 30-45 minutes, tossing every 15 minutes. Rinse and pat dry with paper towels.Bring a pot of water to boil for the pasta. In a skillet sauce the eggplant until tender. Add the cherry tomatoes, capers , garlic, and red wine vinegar. Cook until tomatoes break down. Add this to pasta that has been cooked to the directions on the package. Transfer to a bowl, and set aside to cool to room temperature. Add the mozzarella balls and fresh basil leaves. Check for seasoning. Serve with a bbq steak, chicken or sausage. Bon Appetit.
