Classic Turkey Meatloaf

Ingredients
- 2 lbs ground turkey
- 2 eggs beaten
- 1/4 cup diced onion
- 1/4 cup diced carrot
- 1/4 cup diced celery
- 1/2 cup dried breadcrumbs
- 3/4 cup chicken stock low sodium can sub. water
- 1 tsp kosher salt
- 1/2 tsp pepper
- 1/4 cup ketchup plus extra for glaze
- 1/4 cup mustard
- 2 tbsp. brown sugar
- 1 tbsp. Worcestershire Sauce
- olive oil

- 1. In a pan sauce the onion, carrots and celery until soft. Set aside. in a large bowl, mix the ground turkey and the rest of the ingredients. Add the onion, carrot and celery. On a sheet pan lined with tin foil and sprayed with cooking spray, lay the meatloaf out flat. then form into a loaf. Glaze with ketchup. Bake in a preheated 350 degreee 0ven for 55 minutes. Serve with Brussel sprouts and a baked potato. Bon Appetit.
