Last night I made ground turkey with mixed vegetables. It came out really good. To confirm this I took it to my sister’s house and served to my niece and nephew. They enjoyed it. I was delighted to hear that, as they are my sharpest critics. I sautéed onion, carrot, and spinach. I browned the ground turkey. I added garlic, ginger, basil and pumpkin spice. I added a small amount of masala wine and a little fat-free half and half. I then added some craisins for some sweetness. I let it simmer and let the flavors marry. It came out so yummy. I took it to my sister for her critique. I was so happy the reviews were good. It is good to be cooking again. I love making one pot dinners in which the cleanup is easy. I also love that when I get hungry there is a healthy alternative in my home to eat. The next recipe just might have pumpkin in it. that might be a delicious diversion.
