Cooking on a Rainy Day
It rained yesterday. It has been raining almost every other day since the start of June. With time on my hand and food in my house, I took the time to cook. I had an eggplant, onions and peppers that I did not want to lose. I also had a big bunch of basil that I needed to use as well. I made Spicy Eggplant Dip.I started with the eggplant. I pierced it with a fork. I rubbed it with evoo, salt and pepper. I roasted it in a 400° F oven for 45 minutes. On another sheet pan I roasted the other vegetables. I then added tahini and lemon juice. I finally used my food processor and it came out great. I also made Jane’s Pesto. I took the basil that I bought from Mazur’s market and I added almonds and walnuts. I then added Parmesan cheese,garlic and I streamed in evoo. I cheated and I used my blender to prepare the pesto. It was wonderful to see my very ancient blender still worked. It is also nice to use two different appliances, interchangeably. I think my blender and I are running neck and neck in age. It probably has a patent number on it. I also finally made the spiral ham I bought at Shoprite. Since I needed a cool day to do this, I took advantage of the situation. I served the ham with spinach and noodle pudding, that I also purchased from Mazur’s. It is so delicious.I decided that I want to try to replicate this pudding. I copied the ingredients off the label. I think they left out the cinnamon. Please do not hold me to that, but even my daughter noticed it too. Since today is another repeat of yesterday in terms of weather, I think I will do some more recipe testing.
