Unexpected Guest leads to a wonderful Frittata
Sunday afternoon led to an unexpected house guest. My daughter’s friend stayed over night. Much to my pleasure he is a foodie. When i picked them up I was greeted with fresh Spanakopita, and Israeli salad, both prepared and waiting for me. Both dishes were marvelous. On the way home we stopped at Mazurs a kosher food market. Since I have not been there in a very long time, I decided to stop in and sample some of their food items. I purchased derma, noodle pudding and potato pudding. I also picked up reasonable priced and beautiful fresh basil and scallions. We ordered dinner out because it was late and I was still recovering from Relay. For a snack I made truffle popcorn. It was quite good. For breakfast I made frittata. I am calling it Josh’s Frittata. I sauteed onion, red and yellow pepper, scallion and garlic. I then whisked 6 eggs, water, fresh minced thyme and rosemary. I added it to the sauteed vegetables. I then crumbled in herb goat cheese and I transferred it to a 400° F for 45 minutes. I topped it with chopped basil. It was very well received. I tried it and I enjoyed it too. I love to cook. I love when i make a dish using fresh ingredients and it comes out delicious. It is also so much fun cooking for a foodie. I told my daughter’s friend to come and cook anytime. It wound up to be a lovely time.
