Bonappetitmom's Shakshuka

Ingredients

  • 1 onion chopped
  • 6 cloves garlic minced
  • 1-2 tbsp. olive oil
  • 2-3 tbsp. tomato paste
  • 1 can Pomi crushed tomatoes
  • 1 tsp. kosher salt
  • 1 cumin
  • paprika
  • corinander
  • crushed red pepper flakes
  • Domino granulated sugar
  • 4 eggs
  • feta cheese
  • parsley minced

Instructions

  • In a skillet saute the onions in olive oil. Add the garlic and cook for a minute. Add the tomato paste. Add the cumin, paprika, corinander, red pepper flakes, sugar, salt and pepper. Stir and cook for about 8-10 minutes. With a spoon make a well in the sauce. Add the eggs Cook on the stove top for about 10 minutes until eggs are cooked. Top with feta and parsley. Drizzle with olive oil and serve with garlic knots or pita bread. Bon Appetit.
