Zoodles and Vodka Sauce
Ingredients
- 1 pkg zoodles
- 1 lb. linguine
- 4 ozs. mascarpone
- 4 ozs. shredded mozzarela cheese
- 1 jar vodka sauce
- 4 ozs. Parmesan cheese
- 1/2-1 tsp. kosher salt
- sage leaves
Instructions
- In a large pot add kosher salt and bring to a boil. Cook pasta according to directions. Add zoodles to water about 2-3 minutes before pasta becomes al dente. Strain both and place in a big bowl. Stir in the cheeses immediately. Add the vodka sauce till you get to the consistency you desire. Add sage leaves minced and then use as a garnish on top. Enjoy with a glass of wine. Bon Appetit.
