Bonappetitmom’s Pot Roast
 
Pot Roast
 Servings 2 people
Ingredients
- 1 cup mierpoix
 - 2 onions chopped
 - 7 baby carrot
 - 6 small pottatoes halfed
 - 1 lb cremini mushrooms sliced
 - 1 can stewed tomatoes
 - 1 cup red wine
 - 1 2 lb chuck roast
 - kosher salt to taste
 - pepper to taste
 - olive oil
 - 3-5 cloves garlic
 - 2 tsps. thyme
 - 2 tbsp. chopped rosemary
 
Instructions
- In a dutch oven, sear the beef in a little olive oil on all sides. Remove from pot and set aside. In the dutch oven saute the mierpoix. Add the other vegetables and cook for a few minutes. Add the wine and spices. Cook for a few more minutes. Place the meat back in the pot and nestle until almost covered. Place in a pre heated 350° F oven for 3 hours. Enjoy with potato pancakes and a glass of wine. Bon appetit.
