Roasted Beet Salad
Ingredients
- 1-2 lbs. fresh beets use any variety
 - lettuce
 - grape tomatoes
 - pears
 - fresh strawberries
 - goat cheese
 - grapes
 - peppers any color
 
Dressing
- 1/2 c. olive oil
 - 1/4 c. balsaic vinegar
 - 2 tbsp. honey
 - kosher salt
 - pepper
 
Instructions
- Wash and trim your beets. Place the washed and dried beets in a tin foil poach with a little olive oil. Roast in a preheated 375° F oven for 60 minutes or till a knife can be inserted easily. Cool the beets and peel off the skin. Place on a bed of mixed greens and add any other ingredients that you like. Enjoy with a glass of wine. Bon Appetit
 
Salad Dressing
- Pour olive oil, balsamic vinegar, honey, salt and pepper into a measuring cup and whisk together. Pour over the salad and combine the ingredients. Enjoy over this beet salad or another salad you choose. Bon Appetit.
