Jane's Salmon with Panko and Parmesan Cheese

Ingredients

  • 2 8oz. salmom filet
  • 2 tbsp mayonnaise
  • 1 tsp. crushed garlic
  • 1 tsp. dijon mustard
  • 1/4 cup panko bread crumbs
  • 1/4 cup Italian bread crumbs
  • 1/4 cup Parmesan cheese
  • pinch kosher salt

Instructions

  • In a small bowl combine, the mayonnaise, garlic, mustard and salt. Place the fish on a sheet pan lined with foil and sprayed with cooking spray. Coat the fish with the mixture. In another bowl, combine the panko bread crumbs, Italian bread crumbs and Parmesan cheese. Spoon on fish. Bake fish in a preheated 375° F oven for 20 minutes. Serve with Trader Joe's Polenta with spinach and carrot. Bon Appetit.
