I decided to try my hand at baking. Like I said “I am not a baker.” My kitchen is not conducive to baking. It is a very small kitchen, with no counter space.  I took the recipe my grandmother had given to me years ago for apple cake and I tweaked it using blueberries instead of apples. This recipe for apple cake was given to me about 35 years ago. I had gone apple picking up in New Paltz, New York. I came back with half of my firebird loaded with apples. I called my grandmother and I told her about how many apples I had and asked her “What can I do with them?” She gave me this very simple recipe for apple cake. She told my it was very easy and very good. I made the cake as she directed to me while we were on the phone. I wrote the recipe down and step by step I made it. My grandmother was always right about her cooking and the apple cake was no exception and I made this cake every year that I went apple picking.  Apple picking season is over and we are in the dead of winter. I decided to try this recipe and use fresh blueberries instead of the apples. I kept the recipe for the cake, but I changed it up a little adding lemon zest, lemon juice, vanilla extract and brown sugar. It came out so good. I love the blueberries. It is almost like a cobbler, but it  has my grandmothers cake taste. Yum The house smelt so good and we enjoyed it hot out of the oven. I think I want to try and add a strudel topping the next time I make it. It will probably be even more yum. I posted the recipe on the  BONAPPETITMOM recipe page. It is truly not the healthiest recipe, but if you are going to make a cake fresh fruit is much healthier than canned. You must try this recipe and let me know how it is.
