Two Great Dinners
This was a very busy week. I had unexpected company Tuesday night. My dad and his friend came for dinner unexpectedly. I made chicken chili. It came out fantastic. I browned the chicken and added fresh vegetables. I used two different types of beans. I used San Marzano tomatoes. i added my cast of spices and served it with various toppings and it was a hit. Leftovers went home with my dad. That is a compliment in itself. Last night I decided to cook my ground turkey. I needed to use it or lose it. I di not want burgers since we had burgers the night before. I started out making goulash, but it became Friday Sloppy Joe’s. I started by chopping an onion and some garlic. I then browned the chopped turkey. I then looked in the fridge and noticed an open bottle of vodka sauce. I decided to add that and about two tablespoons of madeira wine. It was delicious. My dasughter loved it. I quickly wrote down the recipe and I posted it on the bonappetitmomturkeyrecipe page. I served it over mini wheel pasta. My daughter said she will even write a comment on my blog on this dinner. It has been a hectic week.Between my daughter and repairing the house from Hurricane Sandy. I will do more cooking this week.
