Today I met my friend and her mom. We had lunch at the local diner. I had blueberry pancakes. I very rarely  make pancakes anymore. They were really good and they had fresh blueberries in them. They were light and fluffy. We then ran some errands. We wound up in the supermarket. I did not know what I wanted for dinner. The fish department had salmon on sale and I decided to make that for dinner. I prepared the salmon with a little olive oil, salt pepper and garlic. I put breadcrumbs on the top and a drizzle of olive oil. I baked it at 400° F for 10 minutes and then I broiled it for an additional 3 minutes. I also oven roasted frozen  cauliflower and Brussels sprouts. at 400° for 20 minutes. I like when they get a little golden brown. I squeezed lemon juice on the fish when I took it out of the oven.  I made a sauce of a 2 to 1  ratio of mustard and mayo. It was really good. I thought I had tartar  sauce, but I forgot I tossed it when we had Hurricane Sandy.  Anyway since I had no pickle relish my sauce did just fine. I like to buy foods that are on sale. It is great to buy fish at $5.99 a pound versus $9.99 a pound. It is funny I went to the store to get bread for Mr. Max and now I have two new recipes to write up.  What I love about using frozen vegetables, is that you can mix and match them without waste. This is great especially in the winter. I also bought decaf coffee. I like having something hot at night after dinner. I like a cup of coffee and I like to indulge in the flavored coffees that are now available. I went to buy the Keurig cups. They had vanilla and hazelnut in decaf without the extra calories of a Starbucks latte. Anyway Mr. Max needs to out and it is snowing. He hates the snow. I just hope we get through this winter.
