Eggplant and mushroom cous cous. It was inspiring. I love eggplant. I love mushrooms. I love cous cous. Bringing them all together was wonderful. If you love eggplant try this recipe. It really is a great way to cook eggplant without adding a trillion calories. It is eggplant that is not fried or drowned in a red sauce. The flavor of the eggplant comes though. I almost added a little sugar, but I decided I wanted to keep the dish savory. This dish is very high fiber and yes I used regular cous cous.
