Zucchini Spaghetti Ala Vodka

I made zucchini spaghetti ala vodka sauce. The recipe can be found on bonappetitmom recipes page. I prepared the zucchini spaghetti. I made the zucchini spaghetti by hand using the tool my daughter purchased for me on amazon. I then boiled it in salted water. Depending on the firmness of the zucchini will determine the amount of cooking time necessary. Cooking time can vary from 5 to 10 minutes or longer depending on the thickness of the strands of zucchini spaghetti. My daughter loves penne ala vodka. I decided to do the same with the zucchini spaghetti. She loved it. My daughter very rarely asks me to make a few that is actually good for you, but she has requested this meal be served again. It was a pleasant surprise. I also prepared cod two ways. I baked both pieces of cod in a 375° F degree oven for 15 minutes and then broiled it on low for 3 to 4 minutes. I used dijon mustard on my piece sprinkled with panko breadcrumbs. I used a drizzle of evoo on hers with the panko on top of hers. I also used the zest of a lemon. I put a little drizzle on hers and alot on mine. My daughter does not like a lot of lemon. She liked the fish very much. I served fruit salad for dessert. I still need to make her breast of veal.
