Panko Crusted Salmon I Needed a change
Dinners need to have variety. The same ole same ole gets tired real fast. Last night I made panko crusted salmon. I used garlic oil on the fish, along with salt and pepper. I then sprinkled a thin layer of Italian seasoned bread crumbs on. I finished it with a topping of panko breadcrumbs for crunch. I steamed fingerling potatoes, and served it with kale salad. My daughter tried my lemon vinegar dressing and she actually liked it. I was shocked. It was a healthy dinner. We ate the fingerling potatoes with no topping. They are so flavorful they really do not need anything but a little salt. It was a very healthy dinner. I also made fish for the woman I hang with. This time I did not over four or over cook the fish. I dredged it slightly in some salt free seasoned flour, and pan cooked it with some butter and evoo. I think she really enjoyed the fish yesterday. I made her mashed potatoes. They were packaged red skin potatoes. she really enjoyed the dinner and it makes me feel good that I left with a warm meal that she enjoyed. I am also getting used to cooking on an electric stove top. I still prefer gas cooking. Stay safe my fans and Bon Appetit.
