Spare Ribs (Dry or Wet)
My daughter was in the mood for spare ribs. Since they are so easy to prepare, I decided to make them for her. I went to Shoprite and I bought a rack of ribs. I made my special dry rub and I put it aside. I boil my ribs. I know you are thinking that it is crazy to do so, but it is not. I also prepare my sausages the same way. I boil them in water for about 30 minutes until the pink is gone. I take them out and I put them on a sheet tray lined with heavy duty tin foil. I then coat them with my special dry rub. I put them in a 375° F oven for 30 minutes meat side down and turn once during the cooking process. The spices melt onto the meat and make a wonderful topping for the ribs. They come out succulent and flavorful. they are also so much lower in calories than a wet rub. The sauces increase the value of the ribs ten fold. Even my daughter loved them. If I was not lazy I would have put the boiled ribs on the grill for the same amount of time on medium heat. What I love about ribs are they are filling, but you are eating a good portion of protein because of the amount of meat on the bones. I also prepared fingerling potatoes. I steamed them in the microwave, just plain. this way they are also very low calorie. You can also eat more because they are small and with no butter or oil, they are a great source of protein. I made a lemon vinegar dressing with mustard and evoo. The salad I prepared was purchased from Costco. It has shaved kale, brussel sprouts, red cabbage and a few other ingredients. It also includes on the side craisins and sunflower seeds. The dressing comes in a packet. I personally do not care for it. I think it is too heavy for it. Since it is a light salad, I think it should have a light dressing to keep the salad refreshing. It was wonderful to cook yesterday and clean up was easy. Stay safe my fans and Bon Appetit.
