Leftover Zucchini Spaghetti II
Yesterday was a busy day of running around. When I got home I made Mr. Max his dinner. I really was not hungry. I made turkey meatballs, the same ones I make for Mr. Max in the morning. I also reheated the leftover zucchini squash with a little pesto and some part skim ricotta cheese. It was so good and it is so filling. I had a small salad to finish off the meal. I was so full. I am trying to stock up on healthy foods. I stopped off at Ivarone Bros. and purchased carrot spaghetti and more zucchini spaghetti. That will be Friday night dinner. I am not quite sure of how to prepare the carrot spaghetti. My daughter wants to eat it raw. I do not think so. I think a nice marinara sauce would be divine. I was thinking of incorporating ground turkey into a recipe and combine the two types of spaghetti. I think I should pick up fresh basil as well. Stay safe my fans and Bon Appetit.
