Chicken Sausage Ragu
Ingredients
- oli
- 6 oz chicken breast cut in small pieces
- 1/2 lb. spicy sausage out of casing
- 2 onions diced
- 4-5 cloves garlic minced
- 1 red pepper diced
- 1 orange pepper diced
- 1 yellow pepper diced
- 1-2 tsp. oregano
- 1-2 tsp. italain seasoning
- 1-2 tsp. dried fennel
- 1 15oz. Marinara Sauce
- 1 150z. cherry tomato with juice
- kosher salt
- pepper
- 1/4 cup white wine
- ricotta cheese
- parsley
Instructions
- In a large pot add some olive oil. Saute the onion for a few minutes. Add the garlic, red, yellow and orange pepper and saute the veggies. Add the chicken, and sausage and cook about 7-8 minutes. Add the oregano, fennel and italian seasoning. Add the marinara sauce and cherry tomatoes. Add the white wine. Cook for an hour or two. Serve over pasta with a dollop of ricotta cheese. Garnish with parsley. Enjoy with a glass of wine. Bon Appetit.
