Spinach and Potato Strudel
Ingredients
- leftover mashed potatoes
- 1 10 oz. choppped spinach
- feta chese
- 1 chopped onion
- 1-2 garlic
- olive oil
- kosher salt and pepper
- puff pastry
Instructions
- Bring the leftover mashed potatoes to room temperature. Saute an onion and garlic in olive oil till translucent. Add the spinach and feta. Sprinkle with salt and pepper. Let cool. Add the spinach mixture to the potatoes and combine. Roll out the puff pastry. Put half of the mixture on the puff pastry. Roll like a jelly roll. Cut in eight pieces. Repeat. Bake in a 375°F for 20-25 minutes. Enjoy with a glass of wine for the holidays.
