Stuffed Loin of Pork
Ingredients
- 3 lb. loin of pork
- 1-2 cups sausage stuffing cake
- olive oil
- kosher salt
- pepper
- 2 onions cut into six pieces
- 1 rosemary sprig
Notes
Butterfly the loin of pork by slicing it across vertically, not going to the end. Salt the meat. Place the stuffing on the meat leaving a border all the way around. Roll the meat and tie it with kitchen twine. Rub with olive oil and salt and pepper the pork. Place the rosemary under each twine of string. Place in a 375°F and cook for 30 - 45 minutes per pound, Serve with broccoli. Bon Appetit.
