Easy Chicken Kebabs

Ingredients
- 2 chicken breast cut into 1-2 inch cubes
- 1 red onin quarted
- 1 eggplant cubed
- 5-6 mini peppers cut in cubes
- cherry tomato
- 1 cup olive oil Fairway
- 1/2 cup balsamic vinager Fairway
- 2 tbsp. mustard Carnegie Deli
- 1 tsp. kosher salt
- 1 tsp. black pepper
Instructions
- Prepare all of your food ingredients to the same size. Using wooden skewers put on a piece of food and repeat the process until all your food is used. In a measuring cup add the olive oil, balsamic vinager, mustard, salt and pepper. Whisk till combined. Place half of the skewers in a plastic bag with half the marinade. Repeat. Let marinade for at least an hour. Preheat your grill. Depending on the size of your chicken, cook for 8 minutes on each side. Serve with corn on the cob. Bon Appetit.
