Cod Dinnet

Ingredients
- 1 lb. cod filet cut in 2 pieces
- olive oil
- 2 tbsp. mayonnaise
- 2 tbsp. apricot jam
- 2 tbsp. dijon mustard
- kosher salt
- panko bread crumbs
- parsley minced
Instructions
- In a small bowl mix the panko breadcrumbs and a little olive oil. In a dry skillet toast the bread crumbs until just brown. Set aside. Preheat oven to 375°F. On a sheet pan lined with foil, place the cod. Sprinkle with a little olive oil. In a small bowl mix the mayonnaise, dijon mustard, apricot jam, salt and pepper. Spread this mixture over the cod and then sprinkle the bread crumbs over the fish. Sprinkle with the minced parsley. Bake for 15 minutes. Serve with spinach and a tomato salad. Bon Appetit.
