Bonappetitmom's Matzoh Zucchini Lasagna

Ingredients

  • 1 box matzoh
  • 6 zucchini sliced very thin
  • 3 onions chopped
  • 1 box Pomi tomato sauce
  • 1-2 tbsp. dried oregano
  • 1-2 tbsp. granulated garlic powder
  • 1-2 tsp. salt and pepper to taste
  • olive oil

Instructions

  • Chop the onions and saute them in a pot with olive oil. In a food processor slice the zucchini very thin. Add therm to the onions. Cook down for a few minutes. Preheat the oven to 350°F. In a baking dish start with a small thin layer of sauce. Then lay down a sheet of matzoh, then put a layer of zucchini. Keep repeating until you finish layering. Bake for 45 minutes. Serve as a side dish with brisket or chicken. Bon Appetit.
