Easy Potato Croquettes
Ingredients
- mashed potatoes
- 1 egg beaten
- panko bead crumbs
- fresh mozzarella cheese cubed
Instructions
- Preheat oven to 375°F. Line a sheet pan with parchment paper. Take a tablespoon of the mashed potato in the palm of your hand. Flatten and make a crevice. Insert a piece of the fresh mozzarella cheese. Roll it into a ball. Dip in the egg and then roll in the panic crumbs and place on the sheet tray. Make as many as you can from what you have. Bake for 20 minutes tossing once while cooking. Serve with a chili sauce or any dipping sauce of your choice. Bon Appetit.
