Pumpkin Pasta

Ingredients

  • 1 15oz.can pumkin puree
  • 1-2 cups chicken stock
  • 1 shallot diced
  • 2-3 cloves garlic minced
  • 1/4 cup apple cider
  • 1/4 cup cream optional
  • 1-2 tsp. kosher salt
  • 1-2 tsp. pepper
  • 1 tsp. rosemary minced
  • pepitas optional
  • 1 lb short pasta

Instructions

  • Prepare the pasta according to direction and put aside. In a deep skillet brown the shallot and garlic in olive oil. Add the pumpkin and chicken stock. Stir and watch consistency. Add the cider and stir. If you need the sauce to be thinner add more stock or cider. Add the rosemary, salt and pepper to taste. A plash of cream is optional. Add this sauce to your pasta. Stir to cover all of the pasta. Garnish with minced rosemary and peptias. Serve with a light salad for a meatless wonder. Bon Appetit.
