Bonappetitmom's Potato Latkes

Ingredients

  • 1 3 lb. russet potatoes peeled and cut in cubes
  • 2 onion quatered
  • 3 eggs beaten
  • 2 tbsp. kosher salt
  • 1 tbsp. pepper
  • 3 tbsp. All purpose flour
  • oil for frying

Instructions

  • Peel the potatoes and place in a bowl of ice water until ready to grate. In a food processor with the grating blade on, grate the potatoes and onion. In a strainer press any remaining liquid out. Put in a large bowl. Add the eggs, salt and pepper. In a deep skillet heat the oil (I used sunflower oil) until hot. Drop a 1/4 cup of potato mixture and fry until golden brown (approximately 4-5 minutes) per side. Place on a plate lined with paper towels to drain. Enjoy with applesauce or sour cream. Bon Appetit.
