Veal Marsala

Ingredients

  • 1 lb. veal cutlets sliced thin
  • 1 cup flour
  • 2-3 tbsp. olive oil
  • 2-3 tbsp. butter
  • 1/2 cup marsala wine
  • 1/2 cup chicken stock
  • kosher salt
  • pepper
  • 1 cup mushrooms slices
  • 1 large shallot sliced thin

Instructions

  • In a plate bowl or plate, place 1cup of flour. Add a pinch of salt and pepper and mix well. Prepare a hot skillet with butter and olive oil. Dredge the veal into the flour, shake off excess and place in the hot pan. Veal cooks quickly, cook for two minutes or until brown, turn and cook the other side for another minute or so. Place the veal aside. Add a little more butter and olive oil. add the mushrooms and shallots. Add the wine and chicken stock until sauce reduces. Add the veal back to the pan to cook through to warm the veal. Check for seasoning. Enjoy with spaghetti squash and roasted brussel sprouts. Bon Appetit.
