Homemade Ricotta Cheese with Fresh Herbs
Servings 8 ozs.
Ingredients
- 4 cups whole milk
- 2 cups heavy cream
- 3 tbsp. white vinegar
- 1 tsp. kosher salt
- 1/4 cup chopped parsley
- 1/4 cup chopped scallions
- 1/4 cup chopped rosemary
Instructions
- In a heavy pan combine the milk and cream. Bring to a boil. Turn off the heat. Add the salt and vinegar. The milk and cream will begin to curdle. Stir for a few minutes. Pour this mixture into a deep bowl with a sieve lined in cheesecloth. Drain the excess liquid in the bowl. Allow to sit for at least 20 minutes. The longer it sits, the thicker it will be. Add the herbs and check for seasoning. Enjoy with crackers and a glass of wine. Bon Appetit.
