Bonappetitmom's Ramp Pesto
Servings 1 cups
Ingredients
- 1-2 cups ramps rinsed and roots cut
- 1/2 cup evoo
- 1/2 cup freshly grated Parmesan cheese
- 3-4 cloves garlic
- 1/2 tsp. kosher salt
- 1 tsp. pepper
- 1/2 cup frozen chopped spinach thawed
- 1/2 cup pecans
- 1 lemon juiced
Instructions
- In a food processor, add all of the ingredients and pulse till mixed thru. Stream in the olive oil until you get the consistency of a paste or thinner for a sauce. Check for seasoning. Serve over pasta and zoodles. Bon Appetit.
