Bonappetitmom's Ramp Pesto

Ingredients

  • 1-2 cups ramps rinsed and roots cut
  • 1/2 cup evoo
  • 1/2 cup freshly grated Parmesan cheese
  • 3-4 cloves garlic
  • 1/2 tsp. kosher salt
  • 1 tsp. pepper
  • 1/2 cup frozen chopped spinach thawed
  • 1/2 cup pecans
  • 1 lemon juiced

Instructions

  • In a food processor, add all of the ingredients and pulse till mixed thru. Stream in the olive oil until you get the consistency of a paste or thinner for a sauce. Check for seasoning. Serve over pasta and zoodles. Bon Appetit.
