Turkey Chocolate Chili

Ingredients

  • lb. ground turkey
  • 1/4 cup minced carrots
  • 1/4 cup minced celery
  • 2 onions minced
  • 2 cloves garlic minced
  • 1/2 package white mushrooms sliced
  • 1 can corn kernels drained
  • 1 can black beans drained
  • 1 can small white beans drained
  • 2 links chorizo sausage sliced
  • 1-2 tsp. salt
  • 1-2 tsp pepper
  • 1-2 tbsp. chili powder
  • 1 tsp. ground cumin
  • 3-4 cups low sodium chicken stock
  • 1/4 cup semi sweet chocolate
  • 1 red pepper sliced
  • 1/2 tsp. cinnamon

Instructions

  • In a large pot saute the onions, carrots, and celery in olive oil. Add the ground turkey and cook till brown. Next add the sliced chorizo. Add the garlic and cook for a minute. Add the corn, mushrooms, white beans and black beans. Add the spices and chicken stock. Add your seasoning. Add more if you need if you desire. Add in small increments. You can always add more, but you can't take it out after it is added.Cook on the stove on low heat for about 20 -30 minutes. Add the chocolate and cinnamon, and stir. Cook another 20 minutes. Enjoy over broccoli rice cous cous. Bon Appetit.
