Roasted Beet Hummmus
Servings 4 people
Ingredients
- 2 fresh beet roasted and cut in cubes
- 1 can chick peas drained and rinsed
- 1 lemon zested and juiced
- 3 cloves garlic
- 2 tbsp. tahini
- 1 tsp. kosher salt
Instructions
- Rub the fresh beets in olive oil. Wrap in tin foil. place on a sheet tray. Bake at 375° F for one hour or until fork tender. Set aside to cool. In a food processor with the blade attachment, place all of the ingredients till smooth and the consistency you desire. Serve with chips and a glass of wine. Bon Appetit.
