Spaghetti Squash

Ingredients

  • 1 spaghetti squash
  • 1 tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/2 tsp. pepper

Italian Style Spaghetti Squash

  • 1/4 cup ricotta cheese
  • 1/4 cup Marinara Sauce
  • 2 tsp. Parmesan cheese

Instructions

  • In a microwave safe dish, place the whole spaghetti squash. Microwave for 4 minutes. Take the squash out and carefully try to cut it vertically. If it is still to hard, place it back in the microwave, for another 4 minutes. Remove and slice the squash carefully and vertically. Once sliced, spoon out the seeds. Place olive oil, salt and pepper on the squash. Place on a sheet tray lined with foil flesh side down. Bake in a 425° F for 1 hour and 15 minutes, until a knife can pierce through the squash. Once down, allow to cool to touch. Using a fork, scrape out all of the flesh until you get to the rind. In a large bowl add the squash, marinara sauce, ricotta cheese and sprinkle with Parmesan cheese. Enjoy as a side with grilled chicken. Bon Appetit.
