Bonappetitmom's Sweet Noodle Pudding

Ingredients

  • 1 16oz pkg eggnoodles
  • 1/2 c. margarine melted
  • 4 eggs beaten
  • 1 cup white sugar
  • 1 1/2 cup applesauce
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon plus more for dusting
  • 1/4 tsp. kosher salt

Instructions

  • Preheatoven to 350°F. Fill a large pot with lightly salted water. Add the noodles and stir. Cook according to directions. Strain and place in a bowl. Stir in the margarine and set aside. In another bowl add the eggs, sugar, applesauce, vanilla extract, cinnamon and salt. Mix into the noodles and mix until well combined. Bake in a greased 9x13 baking pan. Bake for 30 minutes covered and uncover and cook for another 20 minutes. Enjoy with brisket. Bon Appetit.
