Zucchini Boats

Ingredients

  • 2 large zucchini
  • 2 lbs. ground turkey
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1 jar Marinara Sauce I used Raos.
  • 2 cloves garlic smashed
  • 1 tsp. kosher salt
  • 1 tsp. pepper
  • 1 12 oz. pkg. shredded swiss and gruyere cheese

Instructions

  • In a large pot saute the carrots, celery and onions in olive oil, for about 5 minutes.Season with salt and pepper. Add the ground turkey and brown. Add the garlic. Strain any fluid from the pot. Add a jar of prepared tomato sauce. Off the heat add the cheese and stir. Wash and dry the zucchini. Slice in half horizontally and hull out the middle with a spoon. Put the zucchinis on a sheet tray lined with tin foil and vegetable spay. Fill the zucchini with the turkey mix. Top with the remaining cheese on each boat. Bake in a preheated 350°F for 30 minutes. Enjoy with a glass of wine. Bon Appetit.
