Great Grandma Helen's Cucumber Salad
Servings 4 people
Ingredients
- 6-8 Persian Cucumbers sliced thin
- 1 diced red onion
- 1/4 cup white vinegar
- 1-2 tbsp sugar
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/4 c chopped dill
Instructions
- In a food processor, thinly slice the cucumbers. Dice the small red onion. In a large bowl combine the sliced cucumbers,red onion, salt, pepper,vinegar, sugar and dill. Mix and chill.Enjoy with a sandwich as a side salad. Bon Appetit.
- The original recipe calls for regular cucumbers. Slice the cucumbers thinly and drain them in a colander for an hour or so. Drain them and follow the recipe.
