Corn Salsa

Ingredients

  • 2 cup corn kernels
  • 1 1/2 diced red onion
  • 1 diced red pepper
  • 1 can sliced black olives
  • 1/4 cup chopped parsley
  • 1/2 cup olive oil
  • 2 limes zested and juice
  • 1 tsp kosher salt
  • 1 tsp pepper
  • pinch cayenne pepper

Instructions

  • In a large bowl combine the corn, red onion, red pepper,and olives. In a cup combine the olive oil, lime zest, lime juice, kosher salt , black pepper and cayenne pepper. Pour the dressing over the vegetable mixture. Top with chopped parsley. Serve with chips and a glass of wine. Bon Appetit.
