Corn Salsa
Servings 5 people
Ingredients
- 2 cup corn kernels
- 1 1/2 diced red onion
- 1 diced red pepper
- 1 can sliced black olives
- 1/4 cup chopped parsley
- 1/2 cup olive oil
- 2 limes zested and juice
- 1 tsp kosher salt
- 1 tsp pepper
- pinch cayenne pepper
Instructions
- In a large bowl combine the corn, red onion, red pepper,and olives. In a cup combine the olive oil, lime zest, lime juice, kosher salt , black pepper and cayenne pepper. Pour the dressing over the vegetable mixture. Top with chopped parsley. Serve with chips and a glass of wine. Bon Appetit.
