Risa's Chicken Pinwheels
The Chicken Pinwheels were made two ways. One version with bbq sauce and the other with pesto. Both were delicious.

Servings 15 pieces
Ingredients
- 2 pizza dough
- 1 cup shredded chicken
- 1/2 cup sliced red onion half moons
- 1/2 cup pesto
- 1/2 cup BBQ sauce
- 2 cups shredded cheese divided in two
Instructions
- Roll out pizza dough to a 12x15 rectangle. Spread on the bbq sauce. Place the shredded chicken on top of the bbq sauce. Add the red onion. Place one cup of shredded cheese on top. Roll the dough like a jelly roll. Pop in the freezer for about 5 to 10 minutes to firm. Slice into approximately 15 slices and put them inside down on a sheet tray lined with foil and sprayed with cooking spray. Bake in a 350° F oven for 20 to 25 minutes. Repeat substituting the pesto for the bbq sauce. Serve with a dipping sauce (bbq sauce) and a glass of white wine. Bon Appetit.
