Cheddar Cheese Frittata
Servings 4 people
Ingredients
- 1 tbsp. EVOO
- 1 tbsp butter
- 1/4 cup onion minced
- 1/4 cup celery minced
- 1/4 cup carrot minced
- 1/2 orange pepper diced small
- 2 cloves garlic minced small
- 10 x-tra large eggs beaten
- 11/2 cups cheddar cheese grated or shreeded
- 1/2 cup Parmesan cheese grated
- kosher salt as needed
- pepper as needed
- 1/4 cup fresh basil
- 2 tbsp. minced dill
- 2 tbsp. minced rosemary
- 2 tbsp. minced thyme
Instructions
- In a heat proof skillet on the stove top, saute the onion, celery,garlic, carrot and pepper in the evoo and butter. Pinch a little salt and pepper. In a separate bowl mix the eggs, and cheeses. Pour over veggie mixture. Cook for a minute on the stove top and then transfer to a preheated 375° F oven for 25 minutes and then under the broiler for 3 minutes.Sprinkle some extra herbs. Enjoy with toast and a cup of coffee. Bon Appetit.
