Cooking on a Cold Spell Day 1
It is bitterly cold here in the northeast. Today is day one. Tomorrow is going to be worse. I decided to make Cheesey Cauliflower Pie ala Angela. I changed up the cheese and it was delicious. It is so good for me. It is low in calorie, has great protein and is low in fat. I love the fact that I can change up the flavor without taking away the quality of the dish. This has become one of my favorite things to make. For dinner last night I made shrimp scampi and roasted vegetables. The scampi was cooked on my stove top. It was delicious. Anything with butter, lemon and white wine has to be yummy. And it was yummy. So that I would not that fat I roasted red peppers, mushrooms and broccoli. They were delicious. Yes you can roast mushrooms. Pictures of my dinner are on my Instagram page and the recipes are on my bonappetitmom recipes page. Today I was awaken by Mr. Max at 4:30 am. and the again at 7: 30 am. It was 3 degrees and then 6 degrees, It is now 12 degrees and I must make something that involves the oven. I am thinking of baking cookies or baked ziti. Since it is going to snow tomorrow, it really does not matter, because I will be using the oven again. I have also been craving Ina’s lemon curd. That scares me.
