Sweet Potato vs. White Potato

As a small child growing up I remember hanging with my grandmother and watched her cook. She made a lot of potatoes. I noticed that she made more sweet potatoes that than white potatoes. She had a stove top potato maker, and that is how she prepared them. I remember how wonderful the house smelled when she cooked them. I also remember she served them with a little butter, salt, and pepper. They were delicious. I am not sure if my grandmother knew the nutrition information on the two different potatoes, but I do know that in terms of preparation  she was way ahead of her time. She just roasted them. She did mash them for a holiday dinner side with marshmallows on top. I bought a potato maker, when I saw it in a store. I have not used it yet. I think I will tonight. As I have been making sweet potato of late, I decided to officially check out the nutritional information of the white and sweet potato. I knew the sweet potato was high in Vit. A, but now I will reveal more. In terms of calories a small sweet potato is 90 calories versus the white potato with 130. The sweet potato has 4grams of fiber and the white potato has 3grams. By the way both potatoes are excellent sources of vitamins and minerals. Eat the potato that you enjoy more. Sometimes I go for the white potato as it is firmer and stands better in soups and stews. Last night I made sweet potato with roasted kale and a roasted chicken. All my recipes are posted on bonappetitmom recipes page and photos can be seen on my Instagram page.
